Earlier this week, my family had a Christmas dinner while everyone was still in town. My mom’s side of the family (@mymommichele) is Italian, which means we trust them with all of the cooking and always have a big feast, that of course, includes some type of pasta. In Italy, it’s a tradition to do tortellini en brodo (one of my personal favorites all year round honestly).
In our family, ravioli has been the tradition. Half moon shaped ravioli that my great grandmother had a special ring glass she would use to cut them and then pinch the sides closed with a fork. With the leftover dough, you can made some “Christmas Fettuccine…”
My cheeky headline is an “if you know, you know” type of thing…
We actually made more of a tagliatelle (which I prefer because it’s thinner). Below is a fool proof homemade pasta recipe from the old guard which is not to be altered, as well as the ravioli filling. If you can’t make homemade dough, “store bought is fine” (that is, store bought homemade), but honestly making your own pasta dough only takes a few minutes and is definitely worth doing while you’re home for the holidays.
